The dark days challenge is turning out to be a real challenge for us. Dairy products haven’t been a problem for us, there is a small local processing plant that has their own local dairy farm that can provide us with all the dairy products we need. Eggs come from our backyard and our vegetable stores are still full enough. We also have a local flour mill that sells their products in our local market.

The challenge for us has been pasta and meat. We did find a local pasta maker but they don’t have a local retail outlet so we can only buy online. They charge an outrageous shipping fee that I’m not willing to pay. Meat has also been a problem. I finally talked to the meat manager at our little local market (not a big chain store). 95% of the meat they sell comes from out of state plants, but they do buy pork from a producer that is in a nearby town. So expect a lot of our dark day’s meals to feature local pork. The other source we have found is NorbestTurkey; even though they are a national company the turkeys are grown and processed here inUtah.
So here’s this weeks meal; Baked Potatoes with bacon & cheese Stromboli.
We were able to meet the 100% local threshold on this meal. The potatoes were grown in our garden. The sour cream we used to top it with comes from our local dairy plant. We had a side serving of peas; again these came from the garden.
To go along with the vegetables Mrs. Stoney made her famous Stromboli. This is stuffed bread that she makes for us about once a month. She fills the Stromboli with all kinds of different items, some times eggs and bacon; other times ham and cheese, and even pizza toppings have made it into this delicious bread. This time it was filled with mozzarella cheese from a little plant we just learned of here in Salt Lake City, and crispy bacon we bought from the market that was produced in the town of Draper, Utah, less than 5 miles from our home.
This turned out to be a simple and delicious 100% local meal.
