The Dark Days Challenge is a chance for bloggers to try out their cooking skills with Local and hopefully organic ingredients. The challenge is being hosted by the folks over at Not Dabbling in Normal and will last through March 31st.

The dark days challenge is becoming more challenging now that our supply of garden grown potatoes is gone. This week we just made things simple with a turkey sandwich and a salad for lunch. The 100% local ingredients this week include turkey that we had left over from last weeks meal, fresh homemade bread and a delicious salad made from mache and spinach from our neighbors garden. I also added a little local cheese to both the sandwich and the salad!

That sandwich sure looks great. I love turkey and don’t do them often enough but they don’t ever seems to go down in price and the only think available except at Thanksgiving time they might have fresh but the price is off the charts.
I have a turkey in the freezer that I think I need to thaw out and cook. Your sandwich looks yummy!
