My husband is a great gardener and when it comes time to start harvesting….I have to come up with some interesting ideas on how to use up all that yummy garden stuff he grows. The other day we harvested a lot of lettuce! As you can see it was a lot! So for dinner we decided to have grilled chicken salad with Low fat Red Robin Honey Mustard Dressing.
A year ago I went to Red Robin for a PTA luncheon. I was trying to pick something healthy and I chose their Honey mustard grilled chicken salad. It was huge I didn’t eat it all, I brought it home to my hubby and he gladly finished it for me. It was yummy until I looked at how many calories ….YIKES!!!
I have come up with a healthier dressing that tastes just as good, and you don’t have to feel guilty putting it on your salad!! I used Greek yogurt to replace the mayonnaise and honey instead of sugar.
This is the recipe…..you can tweak it, however you want to your liking…I don’t like a lot of mustard and vinegar taste, so I go a little light on those. This doesn’t make much so you may have to double or triple it to make more.
Lettuce torn into pieces
1 tsp poppy Seeds
½ C. Greek Yogurt
1 ½ Tbs. Honey
1 Tbs. White vinegar
1 tsp Olive oil
1 ½ tsp mustard
Mix together and pour over your salad and enjoy the healthy homemade dressing!!
