Hobo Meatball Stew

This time of year we have plenty of fresh potatoes coming from the garden.  Over the years we have built of quite a list of stews and casseroles to use up the bounty from the garden.  This recipe is one of our favorites.  The recipe as written serves 4 or so.  You can scale it up or down a little bit by just adding more veggies.

Hobo Meatball Stew

1/2 package of frozen meat balls ( you can use homemade if you like)

4 medium potatoes, cut into chunks

4 medium carrots, cut into chunks

1 large onion, cut into chunks

1/2 cup water

1/2 cup ketchup

1-1/2 teaspoons cide vinegar

1/2 teaspoon dried basil

Salt & Pepper to taste


Place the vegetables in a 3 qt slow cooker, top with meatballs.  Combine the water ketchup, vinegar, basil, salt and pepper.  Pour mixture over meat balls.

Cover and cook on high for 4-5 hours or until the vegetables are tender.

Serve it with a slice of homemade bread and you have a super delicious and hardy meal!!  We love it!

    This looks like a very yummy recipe. I am always looking for good alternative recipes to maximize our large annual potato harvest. Adding this one to the repetoir of options. Thanks for sharing it.
