So growing up we had Potatoes with White Sauce and Peas quite often and I loved it! My mom would make it with fresh peas from the garden and then throughout the year with frozen garden peas. I continued to make it with my own family…however I didn’t realize how amazing it could be with fresh red potatoes and peas from our garden! We had this last Sunday for dinner and my husband and I couldn’t get enough of it and the next day we had to fight over the leftovers!!!!
2 C. Milk
1/4 C. Whole wheat flour
1/2 tsp. Salt
1/8 tsp. Pepper
4 or 5 red potatoes
1 C. Peas
Cut and peel potatoes and boil until done. Add the peas right before the potatoes are done. Drain the water.
While potatoes are boiling, melt the butter in another pan, then add the flour first and mix. Slowly add the milk a little bit at a time and mix until blended then add some more until it is all well blended together…..make sure that there isn’t any leftover flour on the bottom of the pan or it will burn. Add the salt and pepper and turn the heat up to Medium-high and stir until it comes to a boil and thickens. You can turn down the heat once it starts to boil. The key to get this recipe to work is the white sauce…stir it constantly with a whisk until it thickens!!
Pour the white sauce over the drained potatoes and peas and enjoy!!!
Servings 3 or 4 I double it to feed my family of 6.
