My hubby finally talked me into doing a blog post, I just haven’t had time nor do I know how to do a post…so he will have to help me with that.
This time of year we are harvesting a lot of spinach. What do you do with it all you ask?? I love spinach; it is one of my favorites to put on sandwiches and in salads and soups. It will last in the fridge for a while but one of the best salads I have made is a Strawberry Spinach salad. We had it for dinner 2 nights in a row…..so yummy…it makes me drool just writing about it!! Here is the recipe so you can enjoy it too.
Spinach torn into pieces – 4 cups
½ pound of strawberries
Handful of sliced almonds (you can toast them if you like)
1 Tbs. cider vinegar (I like less vinegar so I put in a little less than a Tablespoon)
1 Tbs. honey (I pour in just a little extra to make it a little more sweet)
Combine the honey and vinegar and mix well….pour over salad.
We like to just slice the strawberries up in to bite sized pieces.
And we use our Ultimate Chopper to chop up a handful of almonds
That is it, strawberry spinach salad . . . so simple and easy…yet so delicious!
