Breakfast Stromboli
Whenever breakfast Stromboli goes on the menu for the week my kids celebrate!! Breakfast Stromboli is one of their favorite meals and of course I enjoy making it because it has bread in it! However, since we have switched to a whole food plant-based lifestyle I have had to change some of the ingredients of a lot of my dinner recipes so they will fit this new way of eating.
I did change a lot of this recipe. Of course, I had to get rid of the eggs and replace it with tofu. This breakfast stromboli recipe still tastes the same if not better than before. It now is a lot more healthy without eggs and cheese. It seems so obvious to me now but when you change to a whole food plant-based diet it makes all of your meals taste so much better!!
The Stromboli Bread
I used to use all white flour for the bread for the Breakfast Stromboli but we have slowly added whole wheat flour to all of our breads and I love the taste of this. You can still put in about a 1/2 cup of white flour in the dough, to help it rise nice. You could also use some spelt flour instead of the white flour.
However, if you want a whole wheat version than sift the wheat flour a few times to make it light and fluffy. Then add the yeast, water, and honey and mix well. Add one cup of wheat flour and set it aside to rise for 10 to 15 minutes. This will help it to rise better. Then add the applesauce, salt and the rest of the whole wheat flour. This makes the stromboli bread 100% whole wheat and a whole lot healthier.
Homemade Barbecue Sauce
One of my favorite sauces is Barbecue sauce. So, of course, I am using it in this recipe because I spread it on the dough for Breakfast Stromboli. I have tried to find homemade bbq sauce recipes online and they tasted good, but more like enchilada sauce.
I finally found the perfect homemade BBQ sauce recipe online. It tastes amazing just like I bought it from the store. It tastes so good I use it all the time on baked potatoes or salads or on veggie kabobs. I love it so much you have got to try this homemade sauce. I pretty much follow this recipe other than I don’t add the oil and I just use normal mustard and not the spicy kind.
Breakfast Stromboli
Whole wheat Pizza Dough(recipe below)
1 7 oz pkg of extra firm tofu
Salt & Pepper to taste
½ Green Pepper chopped
½ Onion chopped
3-4 slice mushrooms
2-3 cloves of garlic
¼ tsp turmeric
Bite size pieces of spinach or kale (optional)
Directions
I usually double this recipe and make two breakfast stromboli. Make the pizza dough first according to the directions. While the dough is rising sauté the green peppers, onions, and garlic in a little bit of water. Add the mushrooms when the veggies are almost done. Keep adding water a tablespoon at a time when it boils out until the vegetables are tender.
While the veggies are cooking drain water from the tofu. Pat it dry in a clean towel then add to frying pan with the veggies and mash with a fork or potato masher into bite-size pieces. Add the turmeric for color and also add the kale or spinach and cook for 5 minutes until the tofu is warm.
Dough Directions
After the dough is done rising then put it on a baking sheet covered with parchment paper. Using a hand roller roll the dough out to a rectangle shape. Using a pastry brush, spread the BBQ sauce on the dough, don’t add too much or it will spill out while cooking. Scoop the tofu scramble onto the dough. Fold the dough up and pinch the edges together to seal the seam shut. Fold each end and seal them shut also. Let the dough rise for another 30 minutes.
Preheat your oven to 375 degrees and once the dough has risen enough then put it in the oven for 15 to 20 minutes. If the top is brown but the bottom isn’t yet after the 12 minutes then put tinfoil over the top so it doesn’t get too brown and bake for another 3 minutes and check then if not done repeat again until the bottom is a light brown.
This makes only one Breakfast Stromboli, I always double it for my family and I also serve it with homemade hash browns!! Have fun making it and I hope you will love it as much as my family.
Whole Wheat Pizza Dough Recipe
2 ¼ teaspoons of yeast (1 package)
1 cup warm water (115 degrees)
1 tablespoon Honey
1 tablespoon applesauce
1 teaspoon salt
2 1/4 cups whole wheat flour
½ cup all-purpose flour/ whole spelt flour
Dissolve yeast in water in a large bowl. Stir in oil, honey, salt, and 1 cup flour. Beat until smooth. Mix in enough remaining flour to make dough easy to handle. Add more flour if needed.
Turn dough onto a floured surface: knead until smooth and elastic (5 minutes). Place in a bowl and cover and let rise in a warm spot until double, around 30 minutes.
Applegate Farm makes a turkey bacon without nitrates. I’m not a bacon fan personally, but my husband likes it. Of course your sister’s farm raised pig is probably so much nicer.

An excellent recipe – and so tasty. Tried it last weekend. Was an absolute blast.
