Spinach Overload? Make Strawberry Spinach Salad

Strawberry Spinach Salad is the perfect springtime salad. It is a great salad for barbecues or to bring as a potluck side to any party.

I love strawberry spinach salad. I never thought I would like the combination of both fruit and spinach together.  However, after tasting this salad I changed my mind.  The sweet strawberries make me love this salad even more. It also looks so pretty with the green and red together. The dressing that goes with this is so yummy. This salad is perfect for a picnic at the park or as a delicious snack.

Spinach Overload?

I know in our garden in springtime we are furiously trying to eat all the spinach from our winter crop.  I love spinach it is one of my most favorite vegetables. It tastes so good. I put it on sandwiches, or in salads, or just eat it plain. We have been harvesting spinach it from our cold frames since mid-December. However, we usually get overrun with it in the spring. We are trying to eat it all before it goes to seed and goes to waste. This spinach strawberry salad is one of the best recipes that we use to help us use up all that spinach.

Easy & quick Recipe

Spinach Strawberry salad is such an easy recipe to put together. This is another reason why I love this salad.  It takes only a few minutes and you have a delicious looking salad. It only takes time to wash and cut up the spinach and strawberries. The dressing is only two ingredients that you mix together. It is so simple I am not sure why I don’t have it more often. If there are any leftovers, I can have it for lunch the next day.  However, it will only keep in the fridge overnight as long as you don’t mix in the dressing otherwise the spinach will wilt. I love how simple it is and yet it tastes and looks like you spent hours preparing it!   Which is why it is the perfect side to take to any party or potluck.

Healthy Recipe

Strawberry spinach salad is such a healthy recipe. It has spinach and strawberries in it. They are a perfect combo to make for a great healthy side dish. If you are having a sweet craving this salad will definitely satisfy that. I look forward to this salad when I make it each year. It is even better if I can get the spinach to last so I can have fresh strawberries from the garden too.  This recipe is a healthy guilt-free recipe so have as much as you want.  It tastes so yummy.   Find another healthy salad recipe here.

Spinach Strawberry Salad

4 c. chopped Spinach
½ pound of strawberries
A handful of sliced almonds (you can roast them with honey if you like)

Dressing
1 Tbs. apple cider vinegar (I like less vinegar so I put in a little less than a tablespoon)
1 Tbs. honey (I pour in just a little extra to make it a little sweeter)

Directions

Wash and dry the spinach.  Using a knife cut the spinach into bite-size pieces.

Wash and slice the strawberries and slice or chop the almonds.

Add all the ingredients to a serving bowl and mix everything together.

Combine the apple cider vinegar and honey and mix well.  Warm up the honey to make it thin and easy to mix with the vinegar.  Pour into a mason jar and wait to add until you are ready to serve the salad.

Pour the dressing over the salad and mix together well. Set aside some strawberries and almonds to sprinkle on top after the dressing is mixed in.  You can also just set the dressing aside and just add it after you have served it on plates.  This way the salad will last in the fridge overnight.
