This creamy vegetable soup will soon become your family’s favorite soup recipe.  It is quick to make and is perfect for a cold winter night.

I have been making this creamy vegetable soup recipe for at least 20 years.  The first time I made this recipe I was in a Foods class in high school.  It tasted so good and I loved it so much that I got the recipe! I made this soup for my parents and they liked it too.  I have kept this recipe over the years and made it but I have modified the recipe to make it a little healthier.

The original recipe was packed full of fattening cheese and cream of chicken soup.  We don’t eat dairy anymore and so I have taken out the butter, cheese, and milk.  Since we don’t eat processed foods either I make my own white sauce instead of the condensed soup.

Don’t worry you don’t need those things in this creamy vegetable soup to make it taste good.  This soup tastes so much better than it did before.  It is full of a lot of vegetables and is so creamy and it tastes so good when it is chilly outside.

Quick Soup Recipe

If you have a busy night, this creamy vegetable soup recipe is easy and quick to make and it tastes so yummy.  I love making soups because they are usually a one-pot recipe!  This saves me on cleaning time.   It takes only a few minutes to cut the carrots, celery, potatoes, and onions.  Then the rest of the vegetables are just frozen and they can just be tossed in.  This soup goes really good with my yummy quick and easy breadstick recipe.

Creamy Vegetable Soup Recipe

3 C. water
½ C. diced celery
½ C. diced onions
1 C. chopped carrots
2 C. small cubed potatoes
1 C. frozen broccoli
1 C. frozen cauliflower
2 C. vegetable broth

White Sauce Recipe

¼-½ C. water
¼-½ C. whole wheat flour
1-2 c. non-dairy milk
1 tsp. salt
¼ tsp pepper.

Directions

Cook the first four vegetables in 3 cups of water in a stockpot for 15 minutes. If you don’t have celery it is fine don’t add it.  I don’t usually have it either and it tastes great without it.  You can mix up what vegetables you add depending on what you have on hand.

Add the frozen vegetables and the 2 Cups of Vegetable Broth. Continue to cook for 15 minutes or until vegetables are tender. Add the white sauce and keep warm until you serve the soup.

White Sauce Directions

Use a shaker bottle and add ¼ c. of wheat flour and a ½ c of cold water and shake it up.  Add the plant-based milk to a saucepan and bring it to a boil.  Add the flour and water mixture slowly to the plant-based milk.  It will start to thicken.  If it isn’t thick enough then add some more flour and water to the shaker bottle and add more to the milk until it is nice and thick.  Stir in the salt and pepper then pour the white sauce in with the vegetables.
