This slow cooker vegetable stew recipe tastes so good and is simple to make.  Slow cooker meals are my favorite to make because I can get it done in the morning.  I don’t have to worry about getting dinner ready when I get home from work when I am tired from the day!

It only takes a few extra minutes in the morning to get the ingredients ready.  Then I just put all the ingredients in the slow cooker and turn it on and I am done.  It is so nice to have dinner done early.  However, if you forget to put it in the slow cooker in the morning you can also make it on the stove top as well.

Recipe story

This slow cooker vegetable stew recipe has been in my family for well over 50 years.  My mom made this for dinner when I was a kid and I loved it so much.  It tastes so yummy and my whole family then and now enjoy this recipe.

This dinner was so good especially when I got home from a hard day at school.  It tastes really good with some of my quick and easy breadsticks or my rustic round loaf bread.  You have got to try this recipe it is very easy to make and I know your family will like it as much as mine does.  It really is quick to make you just cut some vegetables and throw a few spices in the slow cooker and you are done!!

Recipe modifications

However, since we changed to a plant-based whole food lifestyle, I have had to change the way I made this recipe.  The original recipe of my Mom’s called for stew meat and beef broth.  I have changed the recipe so that it is now vegetarian. It has vegetable broth and no meat now.  If you still want to add those to the recipe then by all means do.  Use the same amount of broth the recipe calls for and cook the stew meat before adding to the slow cooker.

Don’t worry even without the meat and broth it really didn’t change the taste of this meal.  It still tastes just as delicious if not better!  My kids still eat and like it just the same.  They didn’t even notice a difference.  I usually double the recipe and have it as leftovers the next day for lunch or dinner.

Slow Cooker Vegetable Stew Recipe

10 small potatoes cubed
3 c. sliced carrots
½ c chopped onions
2 c. vegetable broth
1/4 tsp oregano
1/4 tsp paprika
1 Tbsp parsley
1 Tbsp Worcestershire sauce
1/2 tsp salt
1/8 tsp pepper

Thickener
3 Tbs. whole wheat flour
3 Tbs. Cold water

Directions

Cut the potatoes, onions, and carrots on a cutting board.  Add these ingredients to the slow cooker. Pour the vegetable broth over them and then add the spices and Worcestershire sauce.  Turn the slower cooker on high for 6 to 8 hours.

Thicken it into Stew

It will look like a soup instead of a stew when it is done but the liquid just needs to be thickened up. Put the flour in a quick shaker and then add the cold water.  Shake it up until it is smooth and add to the slow cooker.  Slowly stir it in and it will thicken.  If it isn’t thick enough then add a little more flour and water to it.

    Hey cousin! We made the vegetable stew and it turned out great. Cooked it in the Instant Pot for 35 minutes cook time with a 10 minute natural release.
